Nara Toyosawa Shuzou

奈 良 豊 澤 酒 造

A popular sake brewery dedicated to handcrafting

Brief history of Nara Toyosawa Shuzou

The history of the sakagura, Nara Toyosawa Shuzou, began with the dawn of the Meiji era. At sakagura Nara Toyosawa Shuzou, we minimize mass production through mechanization, preserving the tradition of handcrafted sake production by skilled artisans, while dedicating ourselves to enhancing quality. Approximately 80% of the sake produced is categorized as “Tokutei Meisho” or “Special Designation Sake,” emphasizing our commitment to premium quality. We place particular emphasis on the koji-making process, considered to have the most significant impact on the quality of sake. At Sakagura Nara Toyosawa Shuzou, we meticulously carry out the koji-making process entirely by hand. The sake crafted with pride by our artisans has gained popularity among many enthusiasts, especially in the local area of Nara.
