Brief history of Hakurei Shuzou
Sakagura Hakurei Shuzou has been continuing the brewing methods passed down through generations since its establishment about 200 years ago, emphasizing harmony between rice, water, and people in sake brewing. They place a strong emphasis on cultivating high-quality rice, allowing them to produce delicious sake without polishing the rice too much. The brewing water comes from the pristine waters of the Fudou Falls, located on the slopes of Mount Yuragatake, part of the Daimon mountain range in front of the brewery. Named ‘Fudou-san Water,’ it possesses the unique quality of being extremely soft water, allowing for the creation of both sweet and dry sake. This mysterious water, with its versatile brewing capabilities, is the cornerstone of Sakagura Hakurei Shuzou’s sake. The sake crafted with meticulous attention to ingredients follows traditional brewing methods and is handcrafted by skilled brewers.
